THAI GREEN CURRY

with Coconut Ginger Brown Rice

(Serving size: 2-16oz containers of soup & 2 sides of Coconut Ginger Brown Rice )

For our Thai Green Curry weʻll be whipping up a from-scratch green curry paste using spices & aromatics like (seeded) serrano chiles, fresh lemongrass, kaffir lime leaves, Thai ginger (galangal), Thai basil & cilantro. You’ll find plenty of fresh veggies like sweet peas, napa cabbage, carrots & zucchini cooked up in a rich coconut milk based broth. Served with a side of our irresistible coconut ginger infused organic brown rice. 

SMASHED CUCUMBER SALAD

with Furikake Chickpeas, Garlic Sesame Dressing

(Serving size: 2 entree size salads with 2oz of dressing for each salad)

We created this salad to highlight one of our favorite Asian side dishes-Smashed Cucumber Salad! This dish calls for gently smashing open cucumbers to allow them to soak up the marinade of sesame oil, garlic & rice vinegar. We're also serving up our furikake chickpeas- freshly cooked organic chickpeas tossed in house made furikake seasoning of nori & sesame seeds, lightly roasted to set in the flavors. Served with shredded carrots, cherry tomatoes & our Chinese inspired Garlic Sesame Dressing. All served under a bed of organic mixed baby salad greens. 

RATATOUILLE

with Polenta

(Serving size: 2 servings of Ratatouille & Polenta)

Ratatouille is a thick French stew that highlights the fresh harvests of late spring & summer.  We start by cooking down tomatoes for the base of the stew with garlic, onions, oregano & basil. Roasting off eggplant, zucchini, bell peppers & carrots to caramelize them for a rich flavor. Then we’ll add them to the slow cooked tomato sauce with freshly cooked cannellini beans for extra plant based protein. Served with a thick slice of polenta.
