Walnut parmigiano

Would you believe me if I told you 4 simple ingredients blended together in a food processor could taste so much like fine grated parmigiano cheese that you wouldn't miss the real stuff? Of course not! I wouldn't believe me. But somehow, magically, this combination makes the rich, salty, cheesiness of your dreams! This is a staple condiment in my house. It comes to the table with almost every salad & definitely every pasta dish. Another thing I love about this recipe is that you can use it to replace parm in other recipes, like pesto. Adding This will basically bring everything up to the next level. It's super quick, simple & keeps in your pantry for longer than it will take you to finish it! I'm willing to bet this will become one of those things you'll need to remake as soon as you run out.


WALNUT PARMIGIANO

MAKES ABOUT 1 CUP OF CRUMBLY "PARM"

INGREDIENTS 

1 cup walnuts 

1/4 cup nutritional yeast

1 tsp garlic powder

1/2 tsp fine salt (I use himalayan pink salt)

INSTRUCTIONS

Place all 4 ingredients into your food processor & blend! It seriously that simple. Just make sure you blend long enough to break up the walnuts so they are fine & crumbly in texture. It usually only takes about 30 seconds in my food processor, but you can let it go longer just to be sure. You can't over blend it. 

 

NOTES

I don't recommend trying this in a blender. It will want to turn into more of a walnut butter than that crumbly texture your going for. But if a blender is what you've got, still give this a try! go slowly, stopping often to stir it up from under the blades.
