THEY HAVE SAVED ME FROM UNCOMFORTABLE HANGRY MOMENTS TOO MANY TIMES TO COUNT!
CHOCOLATE WALNUT ENERGY TRUFFLES
MAKES APPROXIMATELY 50 ENERGY TRUFFLES
4 cups walnuts
1/2 cup RAW cAcAO powder
4 cups dates
2 tbl coconut oil
1/4 cup almond butter
1/2 tsp salt (optional)
Place 1 cup of walnuts and optional salt into the food processor. Chop until they are broken up into fine pieces. Place them in a bowl & reserve them for rolling.
Place the other 3 cups of walnuts into the food processor & pulse until they are broken up into small pieces. Then add the cocoa powder & pulse one more time. Add half of the dates, coconut oil & almond butter the rest of the ingredients & blend until combined evenly. Then add the last 2 cups of dates & blend.
Transfer to a medium sized bowl. Use a tablespoon to portion out the truffle size. Roll them into balls with your hands. Roll them in the small bowl with the chopped walnuts and transfer to a serving plate or to a storage container.
THese can be kept in or out of the fridge. after they have a cooled down for a few hours They firm up quite a bit, I prefer them at this consistency. But out of the fridge they are great too, soft & chewy.
This recipe makes a big batch, but they keep in the fridge for a really long time. If you don't have the time to roll all of them at once, just transfer it to a sealable container & roll them as you want. Or you can easily cut this recipe in half.
